Choose Happy: Enjoying Life’s Littlest Moments

Happy Summer Everyone!

I hope summer is treating you well, I cannot believe its almost over. Most of you may be scratching your heads thinking, “Didn’t summer just start?”.  However, in the land of Teacherville back to school meetings are right around the corner.  Judging by the aisles at your local stores you’d think school’s already started, especially since I saw Halloween costumes out while shopping today.  ((This is a totally different subject you don’t want to get me started on.))

You may have noticed that I took a little hiatus, and let me tell you- I needed it.  You see, being a stay-at-home mom for summer’s is filled with many ups and downs.  In my head I thought this summer was going to be a cake walk filled with adventures and laughter.  While most days have been full of laughter, it was also more challenging than I anticipated.  With a 1 year-old and 3 year-old my days have been unpredictable, exciting, frustrating, overwhelming, joyful, and exhausting.  I read a quote today that really summed it all up for me:

THIS. IS. LIFE.

As a mom, I’m sure you can relate.  Everyone tells us that the days are long, but the years are short.  Some days feel like an entire week and other days I can’t believe its bedtime.  In the middle of our ups and downs, I found myself feeling overwhelmed and disconnected from my friends, family, and children. After speaking with my FANTASTIC friends ((& mommy support group)) I realized society is putting too much pressure on me to be “perfect”.

That’s when I pulled the plug, on everything.  I put time into my children and less time into my phone and social media.  I could hear them laughing and seeing that they craved my undivided attention.  I put time into my relationship, I no longer played on my phone at night once the kids were in bed.  Instead I sat with my husband on the porch and just talked. Most importantly, I put time into ME. I read a few books, worked out daily, and planned outings with friends.  In doing this, I am refreshed and a much better version of myself.

As moms we do not need to be perfect.  On social media it seems like we all have it together, but in reality I’m sure we spend 80% of our time in sweats with no makeup.  Don’t look at someones life through pictures and think its perfect, because everyone is facing something.  Instead smile at those happy moments people are choosing to share with you, because the world needs more happiness.  Then, pray for everyone.  I’ve learned all to well in this past few weeks that everyone is facing something.  Pray for your friends, family, and strangers every day to help them overcome those dark moments they may not want to share with you. It’s easy to talk about the good and hard to talk about the bad, but everyone has a a bad.  Prayer, communication, and quality time will help make this world a better place.

By simply going back to basics and enjoying what was in front of me, I am enjoying every day life. Yes, there may be yogurt smeared all over my hallway and the kids have nearly hurt each other playing hulk smash today but this is my life. I am going to love it, every scream and tear in between.  So happy I took this break and ready to get back to it.

Summer Sale: School Supplies Edition

Yes, I am well aware that it is finally summer break.  However, as a teacher you can never pass up a good sale on classroom supplies.  Whether we like it or not, August will be here before we know it.  Below I posted some good deals I found on amazon this morning.  Even if you aren’t a teacher, most of these items are posted on student school supply lists and these are bargain prices for quality items.

These are the best pencils you will ever use.  The eraser actually erases, shocking I know, and the pencils sharpen perfectly in the classroom sharpener.  No one likes to stand at the sharpener for hours watching the pencil break over and over.  Do yourself and your favorite teacher a favor and invest in these bad boys. 96 pencils for $10! Dinner time: Sweet Potato Italian Bake

There’s a few things I cannot live without in this world, and Italian food is at the top of this list. ((Right next to peanut butter cups)). However, I don’t enjoy all the carbs and useless calories in noodles. It’s great to splurge, but not every night.

I was craving pasta horribly, but after eating junk all weekend I couldn’t justify another bad meal. As usual I stared at what we had and just went for it. I made an Italian Sausage Sweet Potato Bake in the skillet. It turned out phenomenal and it will now be added to our rotation. Loaded with veggies and meaningful carbs.

Ingredients:

  • 3 medium sweet potatoes
  • 1 sweet onion
  • 2 peppers
  • Italian Turkey Sausage
  • 2 tbsp Olive oil
  • 2 cloves Garlic
  • 2 tsp paprika
  • Marinara Sauce
  • Proves cheese (optional)
  • Directions:
  • Peel and cube sweet potatoes into bite size pieces. Cut onion and peppers into slivers. Mine were about 1 inch long and 1/4″ wide.
  • Heat olive oil in skillet over medium heat.
  • Place turkey sausage in skillet with 1/4 cup water. Bring to boil and cook until finished.
  • Add sweet potatoes to skillet with olive oil. Cover with lid and allow to cook.
  • When sweet potatoes begin to soften, add peppers and onion.
  • Season potatoes, peppers and onion with garlic and paprika. Salt and pepper to taste.
  • When sausage is finished cooking, cut into slices. Add sausage to potato mixture.
  • Stir everything together. Add marinara to liking. Stir again.
  • *optional* top with cheese and allow to melt.
  • Serve and enjoy!
